In the mean time, I thought I’d give you a little tip:

Ditch the salt shaker and get a couple of tiny bowls for some kosher salt. Add pinches as you cook and taste. It’s easier to control the amount and ensures even coverage.  Remember that flavors are best when layered and not dumped in at one time.  Use one salt bowl for anything meat, and the other for anything not.  This way you won’t cross contaminate anything raw with meaty salt.
