You’ll learn how to make sauces like Pipian Verde (pumpkin seed sauce), Chimichurri (Argentinian sauce for grilled meat), Bagna Cauda (warm Italian olive oil based for crudite), Piri-Piri (Portuguese hot pepper sauce for shrimp and chicken), & Harissa (North African chili paste condiment).

If you attended last session, you’re in luck!  There’s even more sauces on the menu, like:

  • Ginger-Lime Dipping Sauce (Thailand)
  • Green Mango, Carrot & Coriander Chutney (Thailand)
  • Scallion Oil (Asian Fusion)
  • Charmoula (Morocco)

You’ll finally become more friendly with herbs like fresh stevia, cilantro, chocolate basil, lemon verbena & chervil. And aromatic spices like sumac, nigella, thyme, caoriander and cumin.

As always all dishes I teach and prepare are 100% gluten-free, tree nut and soy-free. I hope you can join me for an evening of delicious food, wine and recipes. You’ll be sure to get all of your healthy cooking questions answered throughout the night!

WHEN: Class begin at 5 PM, (doors open at 4:45 PM) Classes last 3 hours.

WHERE: Address given at checkout confirmation.  (Near Stagecoach Park, Carlsbad)

WHAT TO EXPECT: Class size averages 10 people. Before the class starts, finger foods and water will be available for the class participants. I’ll give a brief introduction about the class, then participants will wash their hands and people with long hair will tie their hair back ( for hygiene reasons and since you will be eating the food that you are preparing!). Then everybody goes in the kitchen for the cooking portion (details on that below) which lasts about 90 minutes; At the end of the cooking, people are seated and the featured menu is served along with a taste of 2 to 3 wines or other non-alcoholic options.

COOKING CLASS FLOW: Classes are hands-on: participants will make everything on the menu, working together as a group. To ensure everyone learn the most important parts of a given menu, key techniques will be executed by class participants individually or in small teams of 2-3 people. In order to allow class participants to spend more time focusing on the relevant techniques of a given class, washing, measuring and chopping of the majority of ingredients is done before students arrive. This way, class participants can spend a longer time mastering the more challenging techniques.

WHAT TO WEAR: Flat shoes and comfortable clothing are required for your safety and comfort. Please avoid high heels and loose sleeves.

WHAT TO BRING: All ingredients, tools, and, of course, recipes will be supplied… Aprons are the only item NOT supplied.
