Energy-Packed Cereal (Four Easy Steps)

Today some of our neighborhood schools re-opened. As my dogs and I did our little gang-buster power stroll through the area, I had memories of my many first days of school.  Shoes all polished, cute folders and notebooks, fancy pencil cases and of course the stylish lunchbox!

Of course one thing led to another and before I knew it, my mind went straight to my typical breakfasts back then. French toast, pancakes, cinnamon rolls, donuts, fried eggs and bacon with toasted Wonder Bread, Frosted Flakes and Cheerios.  Oh my goodness, it was no wonder why I could never concentrate from 9-12 am!

Those days, (and for some of us, these days), “CARBS WERE KING”! Let me preface here.  I am not against all carbs.  I am simply pointing out that all carbs are definitely NOT created equal. The important factor is whether or not we are utilizing, or storing, the sugars produced from the carbs we take in. More on that subject later!

Just know that if you are looking to be as healthy as you can be, lose weight, inches, get your blood sugar under control, get better brain function, focus, or your gut working perfectly… The breakfast samples above are, can I say politely, “not gonna cut it”.

Today’s recipe is for you busy folks that want high energy to your morning, you might be tired of eggs and smoothies. Maybe you have been avoiding cereal because of the higher carb content, grain or gluten sensitivity.

Today is a perfect day to give you this recipe.  Kids starting school, fall around the corner, projects appearing, busy times approaching.  I hope you love it.  This is a base recipe.  You can do amazing things with coconut, seeds, nuts, protein powder and a baking sheet!  It’s really easy and can be made in 4 steps – Mix, roll, bake, slice.

Note to self:  If you have a case of the late evening munchies, this does contain chocolate.  You may want to substitute plain, hemp protein powder, ground coconut, nuts, or carob powder.

Use your imagination!  Serves 2, so scale up!

Chocolate Femp (Flax and Hemp) Cereal 

*Pre-heat oven to 325 F

Ingredients:

  • 1/2 cup flax meal
  • 1/2 cup chocolate hemp protein powder (or use plain protein powder)
  • 1/8 c. or more coconut water
  • 1 Tbsp. coconut oil
  • 1 Tbsp. cinnamon
  • optional:  1/4 c. dried goji berries and or 1/4 c. your choice nuts or cacao nibs

Method:

(This is really 4 steps, but I am simplifying here…)

1.  Mix flax meal with protein powder.

2.  Add coconut water, coconut oil and cinnamon.  Mix until pasty.  Add more coconut water if still too dry.

3.  Place on to a sheet of parchment that is the size of your cookie sheet.  Press into a large rectangular shape and then finish by rolling out to an even thickness.  (1/8″ or less is good)

4.  Set right into your pre-heated oven for 15 minutes.

5.  Remove cookie sheet from oven and, with a pizza slicer, slice the rectangle of future cereal into lines about 1/2-1″ apart.  Rotate the cookie sheet 45 degrees and repeat. (I did not just say “pizza” and “cookies” in the same sentence!)

6.  Place back into the oven and turn temperature down to 200 F and leave in for another 15 minutes, or until crispy. Remove tray and cool for 5 minutes.  Break into cereal bitty bites and cool completely.

7.  Optional:  Add any combo of dried goji berries, nuts and cacao if you like, and serve with whatever you like.

Some of my ideas are: rice milk, almond milk, coconut milk, goat or cow’s milk yogurt and on top of my smoothie!  xo
